Sue's Extra Mango Salsa
2-3 Servings
INGREDIENTS

1 medium (1 ½ cups) mango, diced

¼ cup finely chopped red bell pepper

2 Tbsp finely chopped red onion

1 tsp. finely chopped seeded jalapeño pepper (optional)

2 Tbsp.chopped fresh cilantro
-
2 tsp extra virgin olive oil
-
2 Tbsp. Sue’s Mango Balsamic Glaze
-
Juice from ½ lime, approximately 2 Tbsp
-
½ avocado, diced
DIRECTIONS
Combine the first 7 ingredients and let sit for an hour to help the flavors blend. Add avocado before serving.
Delicious over grilled or crispy fish, chicken breast, over lettuce, or as a summer side dish.
